Open Face Goat Cheese Sandwich

I had this for breakfast today and it’s so good! Not sure why it’s called an “open face sandwich” and of course I forgot to take a picture, it looks just like it sounds - toast with stuff on it haha.  I didn’t use basil or pine nuts, I might try next time for the crunch but I didn’t miss it today for sure. I didn’t measure the ingredients, just winged it, also didn’t serve the tomato salad on the side, just piled it all on top of the goat cheese. Yum. Here’s the original recipe I sort of followed:

3/4 cup grape tomatoes, halved

1//3 avocado, peeled and cubed

1/8 t. coarse salt

1/4 cup chopped fresh basil

3/4 oz. goat cheese (2 T.)

1 large slice whole wheat bread, toasted

1/8 t. pepper

1 T. Toasted pine nuts

1 1/2 t. Olive oil

1 T. balsamic

1. Combine tomatoes, avocado, salt, and basil in a small bowl.

2. Spread goat cheese on the toast. Season with pepper.

3. Serve the tomato mixture on the side, top every thing with pine nuts and drizzle with olive oil. Serve balsamic on the side. 

Instructions To toast pine nuts, cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant, 2 to 4 minutes. Transfer to a small plate and let cool.
