Cheese and Asparagus Stuffed Chicken Breast

This post comes from LeDonna, they made stuffed chicken breasts for dinner the other night and she was thoughtful enough to take photos and send me the recipe. This is definitely on my list of recipes to make asap, sounds so good! 


  • 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
  • 2 teaspoons Montreal Chicken seasoning, or more to taste
  • 12 asparagus stalks, trim the ends (fresh or frozen)
  • chopped tomatoes
  • 8 slices Havarti cheese (Mozzarella or Swiss would also work)
  • 1 T. olive oil
Preheat the oven to 400'. Sprinkle both sides of the chicken breasts with Montreal seasoning. Create a pocket in each breast by slicing thru one long side, make sure you don't cut all the way through. 

Place 3 asparagus stalks and some tomatoes on the cheese slices, fold the cheese in half to hold everything together and put inside the chicken. Close the pockets with toothpicks.

Heat the oil in a skillet, sear the chicken until golden brown about 3-5 minutes per side. Transfer to a baking dish and bake the chicken for 30 minutes or until cooked thru.
