Tip-sy Tuesday: Prevent Piecrust from Overbrowning

 I saw this tip in my new/old 'Rodales Book of Hints, Tips, and Everyday Wisdom' and am totally going to do this next time I make a pie - I usually lay strips of foil over the edges but it's awkward to get them to stay on top when sliding the pie in and out (and I've burned myself trying to reach into the hot oven to cover the edges!). This new idea makes sense!

To protect the edges of a piecrust from overbrowning while it is baking, cut the center out of a 10" disposable aluminum pie plate, leaving a 2" wide ring. Place this ring upside down on a 9" piecrust. You'll find that it does the trick and can be washed and used again and again.

PS: yes you can purchase a piecrust ring, that might not have been a thing back in the day haha, but this is still a great idea if you don't want to own one - I don't make enough pies to justify having to store one more thing and will just cut a disposable one next time!
