Green Pancakes with Whipped Cream and Sprinkles

Yesterday I posted a recipe from a local magazine for 'Shamrock Quesadillas'; another one from the same article is for these green pancakes that seem like a fun idea for St. Patrick's Day breakfast. The recipe includes how to make pancake batter but it's just green food coloring that's making them 'special', so if you want to just add coloring to your own homemade or store-bought batter it's going to be the same outcome!

  • 1 1/2 cups all-purpose flour
  • 1 T. sugar
  • 1 t. baking powder
  • 1/2 t. baking soda
  • a pinch of salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 T. melted butter
  • 1 t. vanilla extract
  • green food coloring
  • whipped cream and green sprinkles for topping

1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.

2. In another bowl, whisk milk, egg, melted butter, and vanilla extract. Add green food coloring until you achieve the desired color.

3. Gradually mix the wet ingredients into the dry ingredients until combined. 

4. Heat a non-stick skillet over medium heat and cook pancakes until bubbles form on the surface, then flip; continue cooking until the pancakes are cooked thru.

5. Serve with whipped cream and green sprinkles on top.
