Brooke told me she's been making these cottage cheese bowls and although it sounds weird I decided to try it and I have to say I love it! Super easy and makes a perfect lunch (at least for me).
Put cottage cheese in a microwavable bowl, she recommends using a brand that is on the thicker side. Top with marinara sauce, cooked chopped chicken, Italian seasoning, parsley, salt and pepper, Microwave for a minute until heated thru. Top with parmesan cheese, and I added chopped avocado. SO good!!!
