This was such an easy change up to a pumpkin spice cookie mix that I figured it should be a 'tip' and not an 'actual' recipe! Simply add some chopped dried cranberries and a handful of butterscotch chips along with the ingredients called for on the package. Using my small cookie scoop I got 43 cookies (they took 9 minutes to bake fyi). The plain mix is really good, but the additions made them even better and it made me feel a little better about whipping out cookies made from a mix hahahah.
Welcome to day camp - it's either a place for you to get inspired and want to make stuff, or a place where I can show off the cute things I've made since my family is tired of my texting them pictures every day! Just like camp I do all kinds of fun projects - crafts, DIY, bake, cook, garden and more - and can't wait to share them with anyone looking for ideas.

2 ingredient Pumpkin Spice Cookies!
Mickey made these and wrote that they'd be a good post - I love that she is now remembering to share things with me and takes pictures, so I can share with you... I have the tendency to yell at people when they make good stuff and don't share it hahaha! I haven't made them yet but she said they are the number 1 selling cookie at the corn maze she works at, and apparently Kyle ate 2 which isn't a normal thing for him hahahah. So they must be good! And seriously, this seems like the easiest cookie recipe ever - and they taste great too? Winner winner...
Here's our conversation about what she did:

Mick: 1 can pumpkin. 1 can spice cake. Bake at 375. I'll let you know how long in a bit.

Pumpkin Spice Cookies
To make the frosting:
In a mixer beat together 8 oz softened cream cheese, 1 stick of softened unsalted butter, a pinch of salt, 1 teaspoon of vanilla and 3 cups of powdered sugar until smooth and spreadable - if it's too soft add additional sugar to firm it up.
Note: don't add salt if you are using salted butter. To soften butter in the microwave I cut in pieces and put in microwave safe bowl, microwave at 50% power for 1 minute. You don't want to melt the butter though so watch it - the size of your microwave might change the time it takes to soften.
