Cauliflower Waffles




I know, I know - I have been making some kooky things out of cauliflower in my quest to lighten things up (cauliflower rice, cauliflower pizza, cauliflower breadsticks, mashed cauliflower) ...and here's another one - cauliflower waffles! Do they taste like "real" waffles? No. Do they look like waffles? Yep ;). They are quite easy, taste good, and I think they're a genius way to (a) eat more veggies, (b) eat less bread/carb/flour, and (c) it's a great reason to dig that old seldom-used waffle maker out of the back of my cupboard!

Stay with me - it's not as weird as it seems. Just mix up the grated cauliflower with some cheese and eggs, spoon into the preheated waffle iron, cook for a few minutes until golden and crunchy. Serve however you can think - plain, topped with bacon, sour cream and tomatoes, or a fried egg for breakfast, smashed avocado for a take on avocado toast...you name it!

I made these the first time just for myself when Dave wasn't home in case they didn't work...but they did, and I loved them! So a few days later I made them as a side to grilled chicken for dinner and he loved them too...that's sayin' something.

Ingredients:

3 cups cauliflower, grated
3 cups shredded mozzarella
1/2 cup shredded parmesan
3 large eggs
1/4 cup cornstarch
1 tsp. paprika
kosher salt and black pepper to taste

Directions:

1. preheat waffle iron
2. in a large bowl, mix together all ingredients until combined.
3. pour 1 cup batter into preheated waffle iron, cover and cook for 6 minutes or until cooked thru, golden brown, and slightly crunchy.
4. serve alone or with toppings of your choice.

Loaded Cauliflower

Ok, this isn't technically a "healthy" dish, but it is a tiny bit better than a loaded potato would be...right? It's definitely lower carb if you care about that sort of thing! This was really easy and made a delish filling lunch - steam some cauliflower florets (I bought a small bag of them in the produce section and steamed right in the bag for 3 minutes then put on a plate), then top with shredded cheese (if the cheese doesn't melt stick back in the micro for a few seconds). I sprinkled on some chopped bacon, season with salt and pepper, and finished with a dollop of sour cream. Fast and yummy!

Cauliflower Pizza

Ok, stay with me here - I love this and it's a much healthier version of pizza ... even if you aren't looking for a healthier version of pizza it's worth trying! I know it sounds weird but it's good - Dave will even eat it (when I won't let him order regular pizza!) and seems to like it - or doesn't complain about it if he doesn't haha :).  After baking the crust for a few minutes add whatever toppings you like (we like mushroom, canadian bacon and fresh tomatoes) - or you can top the crust with just cheese (no sauce) and bake it for a few more minutes, then cut into "breadsticks" which is also yummy and makes a good side dish. C'mon, try it :)

I follow this recipe (click here to see original post), but there are many recipes online if you want to check them out. Note: after microwaving the cauliflower I press paper towels on it to remove as much moisture as possible, I don't put it on a towel like the recipe says.





Ingredients: 
  • 1 head cauliflower, stalk removed
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 2 eggs, lightly beaten
Directions:

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a food processor until fine. Steam in a steamer basket and drain well. (I like to put it on a towel to get all the moisture out.) Let cool.
In a bowl, combine the cauliflower with the mozzarella, Parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into a circle, resembling a pizza crust. Bake for 20 minutes.
Add desired toppings and bake an additional 10 minutes.
