I made mixed nuts using this recipe a long time ago (click here for that post); after drying some fresh pumpkin seeds the other day I thought I'd do something different with them and make them sweet and spicy, they turned out really good - almost candy like and quite addicting. Crunchy and chewy at the same time, yum.
Ingredients:
- 1/2 cup sugar
- 1 Tablespoon water
- 1 egg white, lightly beaten
- 1 teaspoon cinnamon
- 1 teaspoon coarse salt, plus additional for sprinkling
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cloves
- 1/4 teaspoon cayenne
- 1/8 teaspoon allspice
- 1/8 teaspoon nutmeg
- 3 cups clean, dry, pumpkin seeds
Preheat oven to 250'. Mix all the ingredients except the seeds together until well combined, then mix with the pumpkin seeds and spread out on a greased baking sheet. Roast until they are the texture you want, stirring every 20 minutes or so. Mine took an hour and 1/2 until they were browned and clumped together (I say clumped which doesn't sound good, but it is!), remove from oven and let cool, then break them into bite-sized pieces.
