Crispy Chicken Piccata

I haven't been making knock-off meals based on Jen's Home Chef delivery meal kits in aa while, she recently gave me another stack of good ones they liked so I tried this one and we loved it. Very easy and not many ingredients. I forgot to take a pic but here is theirs...

  • 1 pound boneless skinless chicken breasts
  • 1/2 pound cooked diced red potatoes
  • 1/4 pound trimmed green beans
  • 1/4 cup Panko breadcrumbs
  • 1 T. mayonnaise
  • 1 T. capers 
  • 1 t. chopped garlic
  • 1/2 t. garlic pepper
  • 1 lemon
  • olive oil
  • salt and pepper 
Preheat oven to 425'. Spray a baking dish with non-stick cooking spray.

Combine potatoes, green beans, garlic, garlic pepper, 2 t. olive oil, and a pinch of salt. Place in baking dish, cover with foil, and bake for 15 minutes.

Remove the tray from the oven and remove foil. Push vegetables to one side. Pat chicken dry, season both sides with a pinch of pepper. Place chicken in empty space in tray. Top evenly with mayonnaise, panko, and 1/4 t. salt. Spray with cooking spray. Cover vegetables again with foil, leaving chicken side uncovered. 

Bake partially covered in hot oven until chicken reaches a minimum internal temperature of 165', 23-28 minutes. 

While meal bakes, cut lemon into wedges. Carefully remove tray from oven. Top chicken with capers and squeeze lemon wedges over meal to taste.
