Spinach Stuffed Portabella Mushrooms - Buffy Blogs

My niece Macey sent me this recipe for stuffed mushrooms - I love that she's created her own blog category called 'Buffys Blog' (side note: Buffy is my nickname for her, as a child she looked like Buffy from Family Affair haha). This one looks and sounds great!

Here's the recipe in her words:


1. Clean mushrooms! Cut out the inside to make a "cup".

2. Using a basting brush, gently coat the mushrooms with oil and spices of your choice. I used salt, pepper, and crushed red pepper flakes.

3. Fill mushrooms "cups" with delicious goodness (AKA: bitchin' spinach dip that really is bitchin') and cheese (pepper jack for moi, but feel free to add whatever cheese preferred)

4. Bake at 425' for 10 mins.
