I made cupcakes for a birthday party last week - Joe likes chocolate cake and chocolate chip cookies so we decided to combine the two! I doctored a dark chocolate fudge cake mix by adding an extra egg, a box of instant chocolate pudding, 1 t. vanilla and a pinch of salt, a big scoop of sour cream, and replaced the oil with melted butter. Those changes alone make a cake extra delish! After they cooled completely I piped filling into each one (combined instant pudding with 1 cup milk, then fold in 1/2 tub Cool Whip). Frosted with chocolate buttercream frosting and sprinkled some mini chocolate chips over top. Right before serving we pushed small chocolate chip cookies into the frosting - I wasn't there but heard they were a big hit!
