Tip-sy Tuesday: toasting pine nuts

Pine nuts are really good - buttery, creamy, crunchy, nutty (and not cheap!); toasting them takes them from good to great and it's very easy and quick to do. Put them in a dry pan over medium-low heat, keep shaking the pan or stirring them with a wood spoon, until fragrant and lightly browned. Watch VERY closely, they burn super fast. Remove from the pan immediately so they don't keep cooking.
