Cheesy Potatoes

I wonder if everyone has their own version of cheesy potatoes (also known as 'funeral potatoes' or 'hash brown casserole') and there are hundreds of different recipes, or are we all making and eating the exact same thing hahahha? Here's my recipe in case you don't already have one:

  • 2 lbs. hash browns (semi-thawed)
  • 1 can cream of chicken soup
  • 1/2 cup chopped onion
  • 16 oz. sour cream
  • salt and pepper to taste
  • 8 oz. shredded cheese

In a large bowl, mix together everything except the cheese. Spoon 1/2 of the potato mixture into either a greased casserole dish or crockpot. Sprinkle 1/2 of the cheese overtop. Add the remaining potato mixture and top with remaining cheese. Either bake at 375' for at least an hour (longer is better); heat on LOW for 4-5 hours, or on High for 2-3 hours. When I make them in the crockpot I stir them every now and then or they might burn on the bottom. 


I forgot (not for the first time) to take a photo once they were baked!
