Tip-sy Tuesday: Buckeye Bars

B asked how hard buckeyes are to make - they aren’t hard but they are time consuming (and we didn’t have much time before she wanted her mom to have them for Mother’s Day) so I asked if buckeye bars would be ok. Yep! So I made a pan real quick and they turned out so good!! I followed my buckeye recipe but reduced the powdered sugar and for some reason they turned out especially creamy, multiple people commented on the texture being amazing - don’t know if less sugar is the reason?


  • 1 1/2 cups smooth peanut butter 
  • 1 stick (1/2 cup) softened unsalted butter
  • 1 teaspoon vanilla
  • 3 1/2 cups powdered sugar
Cream the butter and peanut butter together until smooth. Add vanilla and powdered sugar until smooth and completely incorporated. Spread in 8x8 or 9x9” pan. Chill.

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon shortening
Melt the chips and shortening in the microwave following package directions. Pour over the peanut butter layer and smooth. I sprinkled a few mini chocolate chips on top just because. Chill.
