Strawberry Tarts

Tesha sent me picture of the strawberry tarts that Kayleigh and Kade made, they look great and she said they taste great too! The recipe came out of a kids Christmas baking cookbook, I don't know the name of it so can't give credit. Thanks for sharing this recipe and pics - yum :)





  • 8 oz. store-bought pie dough
  • 5 oz. mascarpone cheese 
  • 1/2 t. vanilla extract
  • 2 T. powdered sugar
  • 6 oz. strawberries (or other soft fruit), cut in half or quarters if large
  • 4 T. red current jelly (*see note below)
  • 1 T. water
1. Preheat oven to 400'. Thinly roll out pie dough. Using a 3 1/2" fluted cookie cutter, carefully cut out 8 circles. Press circles into a muffin pan. 

2. Press a piece of scrunched up foil into each crust. Bake for 10 minutes; remove the foil and bake for an addition 3 or 4 minutes. Let cool in the pan, transfer to a cooling rack. 

3. To make the filling: place the mascarpone cheese and vanilla in a bowl; sift in the powdered sugar and beat with a wooden spoon until smooth. 

4. Half or quarter the berries if you haven't already.

5. Once the crusts are completely cool, use a teaspoon to fill each one with the mascarpone mixture. Arrange the strawberries on top. 

6. Put the jelly and water in a small saucepan and cook over low heat stirring with a wooden spoon until dissolved. Brush over the berries. 

Makes 8 tarts. 

*Note: Tesha couldn't find red current jelly so she substituted strawberry jelly instead. The kids sprinkled powdered sugar on the tarts to garnish them. So pretty!
