End-of Season Roasted Tomatoes

Anyone noticed that this is the first year in forever that I didn't inundate you with posts about roasting tomatoes? I have been roasting them all summer but figured you didn't need to hear about it hahahah. 

But I figured I'd share with you my final roasting of the last of the tomatoes from our garden - I cut up all that were left, even the green ones, tossed with some olive oil and seasonings and baked at 350' for an hour and a half (stirring occasionally):


and then I promptly forgot about them:


NOOOOOOOoooooo! I was very bummed at myself for torching the pan 😩. Fortunately Kyle told me they still have tons at the farm and to go help myself - which I did, and roasted another big dish... and kept my mind on them this time!
