Creamed New Potatoes and Peas

I've posted this recipe in the past but never on it's own - it's usually found under "Easter Side Dishes" or "Easter Menu", but if you want to make this at other times of year (and why wouldn't you unless you're like Lisa and don't like peas hahha?!) you aren't going to think to look under Easter menus. So now it gets its own post.

CREAMED NEW POTATOES AND PEAS - recipe from Epicurious

2 pounds small red skin potatoes
1/4 cup butter (1/2 stick)
1/4 cup flour
2 1/4 cups whole milk
1/2 cup whipping cream
1/2 teaspoon nutmeg
salt and pepper
16 ounce frozen peas, thawed

Boil potatoes until just tender, approx 20 minutes. Cut them in half and set aside.

Melt butter, whisk in flour for 3 mintues. Gradually whisk in milk. Bring to a simmer, stir often until very thick approx. 10 minutes. Mix in cream, nutmeg, salt and pepper to taste. Add the potatoes (note: you can make this 1 day ahead up to this point, cover and refrigerate. Bring to a simmer before continuing with recipe). Mix peas into sauce, cook on medium-low until heated thru, 8 minutes. Makes 8 servings.

I don't have a photo for this, next time I make the dish I will try to remember to snap a pic! For now just imagine what potatoes and peas in a cream sauce looks like :)

Tip-sy Tuesday: alcohol by volume vs proof

True story - when making rum cake for Christmas dinner I only had a bottle of 'Gold' rum 40 percent ABV on hand, but the recipe calls for 'Amber rum 80 proof''.

Side note: I've made this cake for years and never really thought about using 'amber' rum, I just have always used what I have on hand, but I read in the notes that dark has more flavor than light so I wondered if 'amber' is darker and stronger than 'gold' and I better go buy some dark haha.

It was Christmas Eve and I really wanted to avoid the grocery or liquor store so I popped in to the local Rite Aid just to see if they'd have it. The selection was very limited (naturally, I'm at a pharmacy not a liquor store hahha) so I grab a bottle of 'gold' off the shelf just to compare the proof amount to other bottles. I saw another bottle of rum said "35 percent ABV, 70 proof". Ohhhhhh a light bulb went on and I googled what proof is my gold bottle of 40 percent ABV? Sure enough, it's 80 proof!

I didn't realize that ABV and proof are different numbers!

I left the Rite Aid without buying anything and made my cake with gold rum 80 percent. And it was great hahah.

My Google search found this article about ABV (alcohol by volume) and proof. Click here if you care, in a nutshell proof is two times the ABV.

Three Cheese Potato Gratin

I originally posted this in 2016 but it's in a long post about a Sunday Supper meal and I only linked where to find the recipe, not the recipe itself. That seems too confusing to me so I'm giving it it's own post - it deserves it's own post hahah, this is a great dish! Click here to see the rest of the menu.

  • Butter, for greasing the baking dish
  • 2 T. extra-virgin olive oil
  • 1 large onion, chopped
  • 2 large cloves garlic, chopped
  • 1/3 cup heavy whipping cream
  • 1/4 cup low-sodium chicken broth
  • 1 t. minced fresh rosemary
  • 1 t. coarse kosher salt
  • 3/4 t. black pepper
  • 5 small Yukon gold potatoes, peeled, cut into 1/8" thick rounds (about 1 1/4 pounds)
  • 1 large yam, cut into 1/8" thick rounds
  • 1 1/2 cups coarsely grated Gruyere cheese (about 5 ounces)
  • 1/2 cup coarsely grated Asiago cheese (about 1 1/2 ounces)
  • 1/2 cup finely grated pecorino romano cheese (about 1 1/2 ounces)
  • 2 T. chopped fresh flat-leaf parsley, optional

  1. Directions:
  2. Position a rack in the center of the oven and preheat to 400 degrees F. Butter a 2-quart glass or ceramic baking dish.
  3. Heat the oil in a heavy large skillet over medium-high heat. Add the onions and cook until tender and golden, about 10 minutes. Add the garlic and stir 1 minute. Add the cream, broth, rosemary, salt and pepper. Remove the pan from the heat.
  4. Mix all the grated cheeses together in a medium bowl.
  5. Mix the yams and potatoes together in a medium bowl.
  6. Arrange one-third of the potato mixture in the bottom of the prepared baking dish. Sprinkle with one-third of the cheese mixture. Repeat the layers twice more ending with a layer of the cheese mixture. Pour the cream mixture over the layers and cover the pan with foil.
  7. Bake the gratin until the potatoes are almost tender, about 45 minutes. Remove the foil and continue to bake until the potatoes are tender and golden on top, 20 to 25 minutes longer. Remove from the oven and let the gratin rest, 10 minutes. Sprinkle with the chopped parsley, if using, and serve.

makes 6-8 servings. recipe found here at foodnetwork

January 2nd

We are getting a late start on our winter migration and I have to-do lists everywhere - so I'm not going to have time to be creative or make anything for a few days while we are on the road. Instead of doing my usual reruns or 'thru the years' when I need a little break, I'm going to just share some New Year gems I came across that I hope you'll enjoy. I'll be back soon!

I'm only posting this for me, not looking at anyone else  - no point in even
pretending I'm going to work out and eat better as a New Years resolution LOL

Happy New Year ~ 1.1.24

Resolutions? Here's some ideas I saw at Country Living :)

  • Order every drink on the Starbucks Menu.
  • Flamingo a friend’s yard for their birthday or an anniversary.
  • Perfect your charcuterie board skills.
  • Stop drinking your morning coffee AFTER you brush your teeth.
  • Exercise…your right to Taco Tuesday!
  • Host a chicken party!
  • Wine down the day with a glass of vino…oh, wait, you’ve already perfected that resolution.
  • Treat your car to regular disco carwashes.
  • Be on a first name basis with your regular Door Dasher.
  • Perfect your favorite celebrity impression.
  • Work “Time will tell” into conversation at least once a week.
  • Stay in more interesting Airbnb’s
  • Drink your coffee while it’s hot
  • Got a little “junk in the truck?” Find out what’s in there…literally: see what treasures are hiding out in your car’s trunk.
  • Host a Sunday supper for your friends at least once a month.
  • Learn the "Thriller" dance by Halloween
  • Break your New Year’s Resolutions…and don’t feel guilty, one bit!
Happy New Year!

Here's wishing you an amazing 2024 full of only good things :)

Cheers 🎉
