What's Cooking ~
- the worlds easiest/laziest enchiladas - roll shredded chicken in corn tortillas, place in baking dish, cover with enchilada sauce and cheese. bake at 350 until browned and bubbly. serve with lettuce, tomatoes, avocado, and sour cream.
- meatloaf, butternut squash, green salad
- baked pork chops, mushroom ravioli with Alfredo sauce, roasted asparagus
- grilled chicken and apple sausages, ditalini pasta with olive oil and herbs, roasted broccolini
- grilled tuna, sticky rice, wilted spinach
