Italian- Style Meatloaf

I tried another knock-off Home Chef recipe for this Italian-Style Meatloaf. I tend to usually just make my standard meatloaf but I like the idea of adding ricotta and other spices to change it up a bit. They served theirs with roasted broccoli and red pepper strips, and made it using all ground beef - I used their recipe as inspiration and came cup with this:

  • 1/2 lb. each ground beef, ground turkey, and ground pork (1.5 lbs total)
  • 1/2 cup Italian panko crumbs 
  • 1/4 t. red pepper flakes
  • 1/2 t. garlic salt
  • 1/2 cup ricotta cheese
  • 1/2 cup marinara sauce
Preheat oven to 400’.

Combine ground meats, panko, garlic salt, red pepper flakes, and ricotta cheese; form into 2 equal sized loaves. Place in a baking dish.

Bake uncovered for 30 minutes, remove from oven and top each loaf with marinara sauce; return to oven and continue baking uncovered for another 15 minutes or until cooked thru and no longer pink.
