Vegetable Parmigiana

I don't know what to call this - I made it up and it's another of my non-recipe recipes; I'm going with vegetable parmigiana but it could also be named 'baked zucchini and mushrooms, with mozzarella, marinara, and bread crumbs'. Although that's not quite as catchy.


Spray a baking dish with non-stick cooking spray. Add sliced zucchini and mushrooms, top with cubed mozzarella cheese. Cover with a layer of marinara or spaghetti sauce, ,sprinkle with panko bread crumbs. I drizzled a tiny bit of olive oil over the bread crumbs to help them get brown and crispy. Bake 350' until the veggies are cooked thru, the cheese is melted, and the bread crumbs are toasted, about 30 minutes. 

Simple and delicious.
