Hooray, Hooray, the first day of May! I think it's supposed to snow here but still, the spring flowers are coming up and warm weather is sure to follow (at least it better or Dave will have a conniption!) ;)
Do you guys do anything to celebrate Cinco De Mayo? We don't 'celebrate' but it's always fun to have a reason to make any Mexican-themed dinner (unlike any other day of the month that isn't May 5th and I make my standard enchiladas hahah). Here's a list of a few things I've made in the past that you might like to try out this week - there's some good ones on this list but Mexican street corn salad is probably my favorite.
