Lunch today - quinoa, steamed butternut squash (already cut up from the produce section of grocery store), edamame (from the freezer section), chopped up kale, drizzled with olive oil and lemon juice, salt and pepper. This is SO good, easy, and healthy :).
I made enough for two portions and told Dave to help himself - he looked at it and said "is any of that edible?" LOL.
Yum!! Dave really? Lol!
