Ingredients:
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 1/2 cups old-fashioned oats
- 3/4 cup dried cranberries
- 3/4 cup white chocolate chips
Directions:
- In a large bowl, whisk together the flour, baking soda, cinnamon and salt.
- In another bowl beat the butter and sugars until smooth. Mix in the egg until incorporated and then add in the vanilla.
- Slowly add the flour mixture to the wet ingredients and mix until just combined. Add the oats, cranberries and chocolate chips until combined.
- Cover the dough and refrigerate for 30 minutes.
- Spoon dough out in about 2 Tablespoon balls, place on baking sheet lined with parchment paper, flatten slightly with your hand.
- Bake at 350' for 10-12 minutes. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to wire racks. They'll look slightly underdone when you take them out of the oven, they'll cook a bit more while cooling.
