Ingredients:
- 1 cup butter (or 1/2 cup butter, 1/2 cup shortening)
- 1 1/2 cup sugar
- 2 eggs
- 2 3/4 cup flour
- 2 teaspoons cream of tartar
- 1/2 teaspoon salt (I like coarse salt, up to you)
- 1 teaspoon baking soda
- 1/2 cup sugar mixed with 1 T. cinnamon to roll the dough balls in.
Directions:
- Preheat oven to 350'
- In a bowl sift together flour, cream of tartar, salt and baking soda; set aside.
- In a large bowl cream butter and sugar until light and fluffy; add eggs and beat until smooth.
- Add the flour mixture, stir until well blended.
- Shape the dough into small 1" balls, roll in cinnamon sugar.
- Bake on an ungreased or parchment lined cookie sheet, 2 inches apart, for 14-15 minutes until light brown. Cool on racks.
Makes 4 1/2 dozen. Give them away as soon as you bake them or run the risk of eating waaaaaay too many cookies before lunch. Don't ask how I know.
