Snickerdoodles

Mmmmmm. Snickerdoodles. You should make these. That's all I'm going to say.

Ingredients:

  • 1 cup butter (or 1/2 cup butter, 1/2 cup shortening)
  • 1 1/2 cup sugar
  • 2 eggs
  • 2 3/4 cup flour
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon salt (I like coarse salt, up to you)
  • 1 teaspoon baking soda
  • 1/2 cup sugar mixed with 1 T. cinnamon to roll the dough balls in. 
Directions:
  1. Preheat oven to 350'
  2. In a bowl sift together flour, cream of tartar, salt and baking soda; set aside. 
  3. In a large bowl cream butter and sugar until light and fluffy; add eggs and beat until smooth. 
  4. Add the flour mixture, stir until well blended.
  5. Shape the dough into small 1" balls, roll in cinnamon sugar.
  6. Bake on an ungreased or parchment lined cookie sheet, 2 inches apart, for 14-15 minutes until light brown. Cool on racks. 
Makes 4 1/2 dozen. Give them away as soon as you bake them or run the risk of eating waaaaaay too many cookies before lunch. Don't ask how I know.
