Welcome-ish

Found a piece of driftwood that seemed perfect to make into a sign - if only I could think of the words I wanted it to say :)

Gave the driftwood a good brushing to get rid of any loose bits, then designed and printed the vinyl words on my Cricut Joy (essentially making a large sticker). I think I'll take it up north to the 5th wheel and see if any of our camping neighbors are put out hahahah! Now that I'm saying it tho - I also just bought a door mat that says 'Like A Good Neighbor, Stay Over There'...I might be pushing a crabby leave-me-alone vibe a little too strong LOL

Cauliflower Cheese Soup

I watched Georgie again the other day and for lunch I like to find baby foods appropriate for her 'baby led weaning' stage but also foods everyone else wants to eat - so far she's loved the broccoli balls, McGriddle muffins, and pizza bombs (I haven't posted that one yet) and I was feeling pretty confident that she'd like cauliflower cheese soup.

True story - she had a bite and spit it out, Mickey said she always does that when she tries a new thing but after she's thought about it for a second she usually likes the second bite. Guess what? Right, she spit the next bite out too. So Mickey told her to stop doing that and to just try it and Georgie literally looked right at her and shook her head no (she's 9 months old and learning things like waving and pointing, now she's mastered the negative head shake LOL).

Anyway, I can't say I really blame her - the soup has good flavor but I don't like the grainy texture, I will make this again but will blend it in the food processor and try to get it smoother. Because we thought we were feeding it to G I didn't add much salt or pepper and it really needed it.

LeDonna had a good idea that I should have served it more like loaded potato soup by topping it with sour cream, more cheese, and chopped bacon. Yum, that sounds way better (because - bacon!).

  • 1 T. Butter
  • 1 Onion finely chopped
  • 1 Celery Stick finely chopped (I did 2 stalks)
  • 2 Garlic Cloves finely chopped
  • 1.3lb Cauliflower Florets (from a medium cauliflower - I used a whole cauliflower)
  • 1 Medium Potato peeled and diced into 1/2" cubes (I did 2 potatoes)
  • 4 cups Vegetable / Chicken Stock
  • 1 teaspoon Dijon Mustard
  • 1 cup finely shredded sharp Cheddar Cheese

  • Melt the butter in a large pan, over medium heat. Add the onion, celery and garlic and sautè for around 6 mins.
  • Add the cauliflower, potato and stock. Bring to a simmer, cover and cook for 20 minutes or until the potato and cauliflower is soft.
  • Turn the heat off, add the mustard and using a stick (immersion) blender, blitz until smooth.
  • Add the cheese and stir until melted.
  • Taste and season (do not season if serving a baby)
No stick blender?: You can use a blender or food processor. Allow the soup to cool a little and transfer to blender/processes in batches to blend.
Cooking for a baby?: Use homemade or low sodium stock and reduce/omit the cheese to keep sodium levels lower.
Make it Gluten Free: Make sure to use homemade stock or a stock that is gluten-free.
Make it Dairy Free: This soup tastes great without the cheese, just skip it. Replace the butter with olive oil.
Storage: Allow to cool, transfer to an airtight container and store in the refrigerator for up to 3 days or the freezer for up to 3 months.
I forgot to take a picture after it was blended!

Chocolate Chip Cookie Cupcakes

I made cupcakes for a birthday party last week - Joe likes chocolate cake and chocolate chip cookies so we decided to combine the two! I doctored a dark chocolate fudge cake mix by adding an extra egg, a box of instant chocolate pudding, 1 t. vanilla and a pinch of salt, a big scoop of sour cream, and replaced the oil with melted butter. Those changes alone make a cake extra delish! After they cooled completely I piped filling into each one (combined instant pudding with 1 cup milk, then fold in 1/2 tub Cool Whip). Frosted with chocolate buttercream frosting and sprinkled some mini chocolate chips over top. Right before serving we pushed small chocolate chip cookies into the frosting - I wasn't there but heard they were a big hit!

Sheet Pan Pork Tenderloin with Potatoes and Spinach

I snapped a picture of this recipe out of a cookbook but I'm drawing a blank on which one! I feel bad not being able to credit the author. It's a very simple recipe that turned out great, we really like it. The only change I made was adding some carrots along with the potatoes.

  • 1 (1.5 lb) pork tenderloin
  • 1.5 pounds baby potatoes
  • 4 minced garlic cloves
  • 2 T. whole-grain Dijon mustard, plus additional for serving
  • 1 (6 oz) bag baby spinach
  • olive oil
  • salt and pepper
Preheat the oven to 425'. Spray a sheet pan with oil (or for easy cleanup, line it first with foil and then spray with oil).

In a small bowl, mix the mustard, half of the garlic, 1/2 t. kosher salt, and freshly ground black pepper to taste. Place the tenderloin on one side of the prepared sheet pan and spread the mustard-garlic mixture all over it.

On the other side of the sheet pan, toss the potatoes with 2 1/2 T. extra-virgin olive oil, 1/2 t. kosher salt, and freshly ground black pepper to taste. Roast until the pork reaches an internal temperature of 140' and the potatoes are browned and tender, about 30 minutes, tossing the potatoes halfway.

Transfer the pork to a cutting board and let it rest for 5 minutes before serving (the temp will climb to 145'). Meanwhile, stir the spinach and remaining minced garlic into the potatoes. Return the pan to the oven and continue to roast until the spinach wilts, 2 to 3 minutes more.

Slice the pork and serve with the potatoes and spinach, with more mustard for the pork on the side.

Tip-sy Tuesday: Plants that are Toxic to Dogs

I came across this list of plants that are toxic to dogs and since it's planting and gardening season I thought I share with you. It says most 'just' make your pet sick, but a few of them can kill. If your pet has tangled with any of these, call your veterinarian.

Half-Squares Triangle Quilt (part 3)

To finish the quilt I made for Sarge's dog groomer (recap: I made Curt a small quilt from the scarves he sent Sarge home in after being groomed - see how to make the squares here, and how I arranged the squares here) I cut batting and the backing from solid blue fabric, but each a bit bigger than the front so you have extra wiggle room when piecing them together. I also needed binding long enough to go all around the quilt (the binding is the skinny edge of fabric that connects the front and back).

Fabric usually comes in 43 to 44" widths and you need more than that to go around the quilt - and you want the binding to be one long piece. In order to do that I cut strips of fabric about 3" wide and then sew them together to make one long continuous piece. To sew the strips together lay one strip face up, and another face down with right sides together perpendicular to the bottom strip, sew a diagonal line across the corner (see pictures to see what the heck I'm trying to say hahaha:)

Trim off the corner:

Turn over and you have this (continue adding strips in the same way until you get the length you need to go all around the quilt):

I Googled for how to add the binding to join the front, batting, and back fabrics and then machine stitch over top of the entire thing to keep the fabrics from shifting. I suggest you do the same instead of my trying to describe how to do it - you know how confusing my instructions can be and I didn't take photos of the process haha!

Here's the finished quilt - I forgot to take pictures before I got to the groomers and was going to give it away, so I snapped a couple on the car seat!
