Spinach Maria Soup (re-run)

This is the second re-run post this week, but today it isn't because I'm too busy hahaha, it's because today was my mom's birthday and I thought it'd be nice to post a recipe that she liked - when I searched thru some posts that I knew she liked I found one I posted on her birthday in 2018 so I'm repeating her birthday post this year. No, I am not being lazy - it's a good recipe LOL

originally 10/18/18:

Today is my mom's birthday and I was thinking about some recipes and ideas she's given me that I could post in honor of her - there's quite a few of them but this soup popped into my brain and now I want to make it for lunch, so I'm sharing this one :) I don't have a photo (since I'm posting this before I make it!) but it looks like cream of spinach soup ... I'll leave you this adorable bunny and spinach photo instead:

I actually can't remember if mom gave me this recipe, or if she raved about the soup so much that I went and found the recipe somewhere (if I did I have no idea where so can't give credit).  Either way she gets the credit for telling me about it, and I've made it quite a few times since and we really like it. Perfect chilly fall day soup.

SPINACH MARIA SOUP

1/2 stick butter
1/2 small onion, chopped
3 T. flour (mixed with a little water)
3 cups chicken broth
4 oz. cream cheese, cut into small pieces
1/3 cup plain greek yogurt
milk, as needed for consistency
1 box frozen chopped spinach, thawed
1 can artichoke bottoms, chopped into small bite-sized pieces

  • Melt the butter, add onion and sauté until the onions are wilted and softened.
  • In a small bowl combine 3 T. flour with a little water to make a thin roux, add to the butter and onions in the pan and stir to combine. Cook and stir for a couple minutes, then add the chicken broth and bring to a boil.
  • Reduce temperature and add cream cheese, 1/3 cup plain greek yogurt, and enough milk to reach the consistency you want.
  • Add chopped spinach and chopped artichokes: continue cooking over low heat, stirring occasionally, until everything is heated thru and creamy smooth.

TT: Corner Bed Headboard

Looking thru my thousands of photos I came across these pics from Mark and LeDonna last summer (things get lost and buried if I don't remember to post right away! 🤦‍♀️). Anyway, it's a great idea that I thought you might like to see - they have their bed angled in the corner so there's a space between the mattress and the wall (I like to read in bed and just imagine my pillows falling into that empty space haha). They built a corner piece out of wood to fill in the space that serves as a place to prop pillows and also a little display shelf. Smart solution!

Halloween Baggie Wreath (re-run)

I'm a little behind (nothing new about that!) so am showing you a repeat project today - this super cute and easy wreath made out of sandwich baggies, I forgot about this one and have a bunch of dollar store baggies on hand so I think I'll make another :)

This originally posted in October '18:

Michelle, did you think I forgot this idea you gave me (along with the baggies)? Well I didn't - it just took me this long to finally make it!!! Thanks again, I love how it turned out. Initially I was going to make this for December/January - it's going to be so pretty with ornaments or snowflakes attached, but it's got a little "ghosty" feel to it and I think it's also great for Halloween. You'll definitely be seeing this a couple months from now changed up for winter!

This is a very easy project, and inexpensive - it's just 2 boxes of dollar store fold-over sandwich baggies and a wire coat hanger. No other supplies at all - not even scissors or glue. And as long as your littles can tie, this is a great kid craft too.

Bend a coat hanger into a circle, and bend the hook down a bit to form a loop for hanging. Then get to tying the baggies on...I started by folding the baggies into orderly little rectangles but realized it totally doesn't matter - just wrap a baggie around the wire and tie on. Keep going until you can't fit one more baggie and you're done. Decorate however you want - I did a Dollar Store bow and cutie spider.

a regular wire hanger made a 12" circle

don't know if it matters, but I alternated turning the bags
up and down when tying them on.

Ronda was with us when Michelle was telling me how to make this, and she said "oh Jill is going to love this, she loves making crap out of random things" hahahahah. Yep, I do actually ;)

Sweet - today is National Dessert Day!!! What's your favorite dessert and will you eat it today haha? Mine is a donut, but if you count that as more of a breakfast thing then my second and third fave's are fruit crisp and anything peanut butter. Great, now I'm hungry.

MSIH: Hawaiian Baked Chicken

I'm not sure how I landed on this website but a lot of the recipes I clicked thru look yummy, I saved this one for Hawaiian chicken even tho I didn't think Dave would like it and I'd probably never make it. So I do what I always do when there's a recipe I want to make but not for us - ask my sis if she's hungry of course! I changed the original recipe by halving the amount of chicken and pineapple but keeping the rest of the ingredients the same to make sure there would be enough sauce, I don't know why this sounded like it could potentially be dry - I'll share how I made it, click the link below to read the original recipe.

Jen's review:

Yay! My dinner delivery service is BACK! WOOOOO!! This one was some version of Hawaiian chicken she said. I like chicken but LOVE Hawaii so expectations were high. Haha. Kidding kidding. So while this one was cooking the house smelled great.. I was hoping it tasted as good as it smelled! Jill said that she made this extra saucy but honestly it seemed like the perfect amount of sauce to me. I put mine over rice, and I added some frozen spinach to my rice. That was delicious. The husband ate his plain, just the meat with no rice, and he also really liked it! He commented how moist the chicken is, and he was right. That’s  probably due to the fact that she made double the amount of sauce but either way it was delicious. I don’t know how hard this is to make or how unhealthy it is so I will have to wait until I see the recipe to decide if I will make it again. The husband doesn’t love pineapple on his food, he likes it separate, but doesn’t usually like it cooked in things so he didn’t rank this one as high as I did, but he did say he’d be willing to eat it again! (Gee what a giver, willing to eat what someone else has made). Haha. That’s a complaint for another day. Try this chicken- you won’t be disappointed!

  • 1.25 pounds boneless, skinless chicken thighs
  • salt and pepper to taste
  • 1/2 t. garlic powder
  • 2 T. melted butter
  • 1 (8 oz) can crushed pineapple, undrained
  • 1/4 cup chicken broth
  • 1/4 cup spicy brown mustard
  • 1/4 cup honey
  • paprika
Preheat oven to 400'. Season chicken on both sides with salt and pepper, place in a shallow baking dish coated with non-stick cooking spray.

Combine the melted butter, chicken broth, mustard, honey, garlic powder, and pineapple with it's juice; spoon over chicken and sprinkle with paprika.

Bake for 45 minutes or until a meat thermometer reads 180'.

NOTE: 45 minutes seems like a long time to me, told my sis I would start checking it at 30 minutes. I didn't ask how long she baked it for but when I find out I'll update this post!

Halloween Display Table

I decorated our front hall table for Halloween a little differently this year and thought I'd share for a quick post this morning. I set up my usual orange Halloween tree that has sparkly spiders, black and purple ornaments, black and white ribbons, and black roses at the top of the tree. I'm super lazy and the tree is small, so when it's time to put the tree away I just leave all the decorations on it and cover it with a garbage bag and put it in storage.

I have the 'spooky terrarium' on top of creepy cloth (that's what it's called!); and the new additions are (1) an open front jar filled with moss, a skeleton head, and a couple rubber mice, and (2) I stuck 2 black circles on a burned out globe lightbulb using glue dots, and covered with cheesecloth. LeDonna thought it was a white balloon and that would work too.

I think it turned out pretty cute - I'm not into gory or gruesome decor and I don't decorate everywhere; I read a book about 'cozy minimalism' that advises to just pick 3 areas in your house as focal points so that's pretty much what I do now - front porch, front hall display table, and I put the skeleton hand wreaths on our back doors.

Tip-sy Tuesday: oven-drying herbs

Today's tip is more of a failed tip thing - I read that you can dry herbs in an open door low heat oven, so when I chopped down all of my pallet herb garden I decided to speed up the drying process and try the oven method. Well after a few minutes all the basil was turning brown like it's being cooked, not good! So with all the other herbs I have (oregano, parsley, and thyme) I'm back to the air-drying in brown bag methods (which I know works, it just takes a couple weeks). Click here for how to air-dry herbs.

Halloween and Fall Card Projects

Well I got busy doing outside work today and just now realize I forgot to blog this morning! I got most of the garden put away, and hung up decorations on the front porch - it's chilly but sunny so figured I'd take advantage of the decent weather. Today I'll just show you this cute Stampin' Up card class from Ronda, she gave me all the supplies to make these projects other than the stamps but I'm pretty sure I have some that will work - these are fun inspo ideas if anyone feels like paper crafting! I'll put my own versions together and share with you in the next few days, in the meantime here's what she did:
