Tip-sy Tuesday: drink coaster hack

Today's Tip-sy Tuesday tip comes from Al and Cathy - Home Depot has free samples of flooring squares and they make great coasters. They're water resistant and rubber backed, and come in tons of different colors. I felt a little guilty when I got some the other day, it seems a little like stealing since I don't plan to put down new flooring; HD didn't even blink when I asked if I could have 4 of them, didn't care at all. Good tip (is it a tip? is it a hack? haha - whichever, it's a good idea). 

Oh, if for some reason you try these flooring sample coasters and they don't do the job, don't come back complaining to me LOL. I haven't used them enough yet to know but so far so good!

Turkey Taco Filling (and more)

This is a simple recipe and I wasn't really planning to blog it but it turned out to be a very versatile meal so I figured I share. 


I intended to eat this taco filling in lettuce wraps for a healthy lunch - which I did and it was great - but then I thought it'd be good on top of a salad (sort of another take on my taco-salad hack) - which I did and it was great. And then I had another thought (full of thoughts, right?!) that if I added some water it might make a good soup - which I did and it was great. Taco filling, salad topping, chili-like soup - however you want to eat it, it's delish. 

  • 1 lb. ground turkey
  • 1 small container pico de gallo (I found this in the produce section - it's a mix of fresh onions, tomatoes, black beans, and corn)
  • 1 packet taco seasoning
  • 1/2 cup chicken broth
  • 8 oz. can tomato sauce
  • salt and pepper

Brown the turkey. Add the pico de gallo and cook a few minutes until the onions are cooked down a bit. Stir in the taco seasoning and chicken broth, cook until the liquid is mostly absorbed. Stir in the tomato sauce and cook until it's warmed thru. Season with salt and pepper to taste. 

I forgot to take a photo of it on the salad - so just picture that it looks just like this with lettuce underneath



for the soup I just added some water, topped with a little cheese and sour cream

At-Home Coffee Treat

This is a non-recipe recipe for my new favorite drink - I made it up after drinking something similar that I picked up at a drive-thru while out and about one day, not sure what the 'real' recipe is but I'm really enjoying this home-made version. 

It's just cold coffee with a couple glugs of half and half and a splash of flavored syrup over ice. Easy! To keep it low cal and low sugar I'm using fat-free half and half, and sugar-free flavored syrup (I get the syrups at Marshall's and they have lots of different flavors).  I'd probably like it even more if I blended it but I'm too lazy to get the blender out. 

And I'd like it most of all if I used real cream and added whip cream and drizzle on top but a girl's gotta have a little willpower every now and then LOL!

Yes, I know this is a simple post but I love it, so am sharing... Happy Saturday 🤗

MSIH: Taco-Tot Casserole

This week's "my sis is hungry" review is for Taco-Tot Casserole - here's what my sis had to say about it in her words, recipe and my notes to follow: 


Wow its been a long time since my Sis has made me dinner! Ok that’s a lie - she makes dinner when she has me over but it's been a long time since she has spoiled me by making my dinner and giving it to me to heat up and try to pass off to the family as my own. Usually they see through my lies though as the food is generally better. By “better” I mean its edible. And didn’t come from a meal kit.


Anyway, last night I had a wonderful surprise, that my sister knew I was hungry.




The husband is out of town so it was only for me and the teen. First of all it had tater tots on the top. How can you go wrong with tater tots?  This meal gave off Shepherds Pie vibes. Which is a good thing.  But different.  When I make shepherds pie I put cream of mushroom soup or some other kind of sauce in the burger/corn mix.  In this case it was more dry than mine and had beans in it.  It looked like it would be dry however it really wasn’t.  The flavor of the meat mixture was really good.  Really flavorful.  Brooke doesn’t particularly like beans however in this she said she “didn’t mind them”.  Which is pretty close to a compliment I think for a teenager.  Jill also said they didn’t have regular tater tots at the store (when will all this covid/grocery madness stop? and what does covid have to do with tater tots?)  So she used tater tot crowns instead which was delicious.  They crisped up on top and were great.  Lastly she gave me a sour cream/something mixture to “drizzle” on top.  That was the only part I didn’t actually love.  The team and I both preferred it with regular boring sour cream.

 

All in all this meal was delicious.  I would make this again!!  It was a great variation to my normal shepherds pie and I could add it to the rotation of dinners I often ruin and force my family to eat.


  • 1 pound lean ground beef
  • 1 medium yellow onion, chopped (about 1 1/2 cups)
  • 1 (1 oz.) packet original taco seasoning
  • 1/2 t. salt
  • 2 cups frozen corn, thawed
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (5 oz) can chopped mild green chiles, drained
  • 8 oz. shredded Mexican cheese blend (about 2 cups), divided
  • 1 (32oz) bag frozen tater tots (tater tot crowns and cauliflower tots also work)
  • 1/2 cup sour cream 
  • 2 T. hot sauce
  • 2 T. lime juice
  • 1 avocado, chopped
  • 1 tomato, chopped
  • 1 jalapeño, seeded and chopped
  • cilantro leaves
1. Preheat oven to 400'. In a large skillet over medium-high heat, cook ground beef, onion, taco seasoning, and salt until browned, stirring to crumble, about 8-10 minutes. Remove from heat. Stir in corn, black beans, green chiles, and 1 cup of the cheese. 

2. Spoon mixture into a lightly greased 9x13" baking dish. Place tater tots in an even layer on top of the mixture. 

3. Bake, uncovered, in preheated oven until tots are golden brown and crispy, 35-40 minutes. Sprinkle with remaining 1 cup cheese, bake until melted, about 5 minutes more. 

4. Whisk together sour cream, hot sauce, and lime juice. Drizzle casserole with sour cream mixture; top with avocado, tomato, jalapeño, and cilantro. 



Jill here: I made this in 2 smaller pans so we could also have it for dinner (most of the time I make her meals that I want to try but don't necessarily want to serve - that usually means it has onions and peppers in it which Dave doesn't like, or it's spicy which I don't like). We also really like this recipe and will make it again for sure. I didn't make the sour cream mixture for us so can't comment on that part. I didn't have enough tater tot crowns to cover both pans so I supplemented with cauliflower tots. Delish.

Easter Bunny Gnomes

Do you ever wake up thinking "you know what we need around here? An Easter bunny gnome"? Hahahha well I did. After the Valentine gnome and St. Patricks' gnome it was obvious there needed to be an Easter gnome...


This came together really quick - it's a cross between the 2 previous ones but this is just an idea, you can make yours out of felt, socks, paper, whatever.  I started with a paper cone-shaped party hat; using hot glue I covered most of the cone with lightweight cardstock, then trimmed the bottom so it'd be flat. Fold one edge of a felt square up to form a little cuff and glue in a couple places to keep in place, don't glue the entire edge because you need a space to glue the ears under the flap. Glue the felt around the top of the cone to form the hat. Cut felt pieces to make the ears, I used a larger piece of purple with a smaller piece of white in the center. Add a stuffing beard and a colored pompom for the nose. Tie a length of twine around the tip of the hat. Literally took me no time to make this, and it's pretty darn cute! 

supplies:

  • paper cone-shaped party hat (I bought a package of them at the dollar store)
  • 1 sheet cardstock for the body
  • 1 piece of felt for the hat - I didn't measure but mine is probably 8" square (ish - wing this part by wrapping a piece of felt around the cone and figure how much you need)
  • 2 colors of felt for the ears
  • stuffing for the beard (or fur, feathers, pulled apart cotton balls...)
  • pompom nose (or a small wood bead)
  • twine to tie the top of the hat
  • hot glue and scissors

Easter Bunny Charcuterie Board

Today would normally be a Tip-sy Tuesday tip but instead I'm sharing this cute idea I saw on thebakermama.com. Not my idea and I haven't made it yet, but I'm sharing it anyway so you have time to plan ahead if you want to have it on your Easter menu.


So easy - the face is a plate of hummus decorated with black olive eyes and mouth, asparagus whiskers and a cherry tomato nose. His ears are round pita crackers filled with sliced red peppers; then fill in with assorted veggies - broccoli, celery, radishes, baby carrots, cauliflower, asparagus, olives - a last cute touch is the bow tie made of broccoli and a cherry tomato.

Easter Magic Cookie Bars

There's tons of recipes online for magic cookie bars, or you might already have a favorite recipe - I like the idea of using different colored M&M's to change them up for different holidays. Like these pastel colored ones for Easter. Cute - and yummy, of course!


  • ½ cup butter 
  • 2 cups graham cracker crumbs
  • 14 oz sweetened condensed milk 
  • 1 cup of mini chocolate chips
  • 1 cup white chocolate chips
  • ½ cup oatmeal
  • ½ cup coconut flakes
  • 1 cup Easter M&Ms

1. preheat oven to 350'.

2. Melt the butter and mix with the graham cracker crumbs. Press into the bottom of a 9x13" baking dish lined with parchment paper. 

3. Pour sweetened condensed milk over the graham cracker crumbs. Sprinkle with remaining ingredients.

4. Bake in preheated oven for 25-30 minutes, until set and lightly browned. Cool before cutting into squares.
