Starch Madness: Crockpot Spinach White Bean Soup

This soup is surprisingly good and really easy! Not just for starch madness, I'll for sure make this again. I really like the addition of tomato puree with the broth, beans and spinach, it added a really nice flavor to what I usually think of broth-based bean soup. 


My changes and notes: I used chicken broth instead of vegetable, 1/4 cup of chopped onion, and added long-grain brown rice instead of white. I used baby spinach and didn't chop it up but I think I would like the texture better if I had smaller pieces of spinach - otherwise I love this soup!
  •  6 cups reduced-sodium vegetable broth
  • 1 can Great Northern beans, rinsed and drained
  • 1 can (15 oz.) tomato puree
  • 1/2 cup finely chopped onion
  • 1/2 cup uncooked converted long-grain rice
  • 2 garlic cloves, minced
  • 1 t. dried basil
  • 1/4 t. pepper
  • 1/8 t. salt
  • 7 cups chopped fresh spinach
  • 1/4 cup shredded parmesan
In a 4 quart crockpot, combine 1st 9 ingredients (broth thru salt); cover and cook on LOW for 6-7 hours until heated thru. Add spinach, cover and cook another 15 minutes or until spinach is wilted. Serve with parmesan. 

note: it's ok to freeze this soup before adding the parmesan.

SM: Dynamite Shrimp Rice Bowl

I haven't made a knockoff of one of my sis's hello fresh/home chef meals lately - so when I couldn't think of anything to make for dinner last night I remembered this recipe for 'dynamite shrimp rice bowl' and figured I'd try something different. I don't like spicy so 'dynamite' worried me a bit, but the only spice is from the boom boom sauce so I made my own version and left the heat out (you can purchase boom boom sauce in a bottle but I'm betting it'd be too spicy for me!). 


I liked this more than Dave did but that might have been because I forgot to add the wonton strips (I topped my leftovers for breakfast with them and the crunch added quite a lot), he isn't a big sauce guy so didn't add the boom boom sauce, and he also said it needed more salt (why he didn't just add more salt at the table is on him 🙄). The original recipe called for 'cilantro lime' seasoning and seasoned rice vinegar, I didn't have those so changed it to dried cilantro and lemon pepper instead, and white vinegar.  

The original recipe heated the rice before mixing it with the other ingredients, I mixed mine in cold and then had the thought that shrimp don't take very long to cook and it might take longer for the rice to get hot - so I baked the rice a few minutes before adding the shrimp. If you start with the rice hot I don't think you would need to prebake it, making this a very quick dish. 

Here's how I made the knockoff recipe:

  • 1 cup edamame (shelled)
  • 1 cup cole slaw mix
  • 2 cups cooked jasmine rice
  • 1 t. dried cilantro
  • 1 t. lemon pepper
  • salt and pepper
  • 1 T. soy sauce
  • 1 T. white vinegar
  • 1 lb. shrimp, peeled, deveined, tails-off
  • boom boom sauce
  • wonton strips

Preheat oven 400'. Pat shrimp dry, set aside. 

Combine rice, edamame, slaw mix, cilantro, lemon pepper, salt and pepper to taste. Spread into an even layer in a baking dish. Bake for 10 minutes.

Remove pan from the oven. Top mixture with shrimp, season with a little salt and pepper. Bake uncovered for 15-18 minutes until shrimp is cooked thru. 

Remove from the oven. Stir in vinegar and soy sauce to taste. Garnish with boom boom sauce and wonton strips.

Starch Madness: Oatmeal Cake

My sis sent me this recipe and pictures (I'm using her pics so I can share this before making myself - cuz it's a good recipe for our theme this month) for oatmeal cake using ingredients you'd typically eat in your breakfast oatmeal. Yum, cake for breakfast anyone? I questioned her photo that looks like it made way more than the ingredients seems like it should but she said nope, she followed recipe exactly. It says sweetener optional so she added a tablespoon of honey and sprinkled with chocolate chips.


She said "it's actually delish, surprisingly good". And she's eating it for a snack instead of for breakfast. 

Ingredients:

  • 1/2 cup oats
  • 1/2 ripe banana (spottier the better)
  • 1 egg
  • 1/4 cup milk of choice
  • pinch of salt
  • 1/4 tsp baking soda
  • chocolate chips
  • optional 1 T. sweetener of choice if you want it sweeter (honey, maple syrup, coconut sugar, brown sugar are all good options)

Directions:

1. add all ingredients (except chocolate chips) to a blender and blend until fully combined.

2. pour batter into an oven-safe baking dish

3. top with chocolate chips

4. bake at 350' for 20-25 minutes

Tip-sy Tuesday/Starch Madness : Carpet Freshener

A break from a starchy recipe, but still starch related haha. 

I made carpet freshener a long time ago only using baking soda and essential oil; this time I made it another way by combining equal parts cornstarch and baking soda along with essential oil in whatever scent you like.

  • 1 cup cornstarch
  • 1 cup baking soda
  • 20-30 drops essential oil (I bought pine fresh scent or something like that at the Dollar Store, for using to make the carpet smell better the cheap stuff works just fine). Pine isn't my favorite scent but my choices were 'bartlett pear', 'marshmallow fluff', and something pecan...pine it is. 
I keep this in a mason jar fitted with the shaker top from a Kraft parmesan cheese jar. Sprinkle on carpets to help remove odors and stains. (I read that cornstarch is good for dealing with oily stains, it absorbs the oils.) Let it sit on the rug for 10-15 minutes before vacuuming.

Starch Madness: Scalloped Potato Recipe Update

I posted this amazing recipe for scalloped potatoes in 12/2020, except I did not write it in an amazing way hahah. When making them for dinner last week I tried to follow my recipe and kept saying to myself "what the...why would I do that...and what's a pinch of nutmeg" hahaha. So I decided to update the recipe in a fresh post in case you tried to make these following my old post and gave up on them! This way it's brand new and hopefully you'll forget my previous attempt.

This really is a great way to make scalloped potatoes, everyone loves them! You're basically making a cream sauce, adding the potatoes to the sauce and cooking for a couple minutes before finishing them in the oven. Yum. Don't be afraid to use the spices, taste as you go and adjust accordingly. If you add ham pieces like I did this time watch the level of salt you add tho, the ham will up the saltiness factor. 

For a 13 x 9" pan (halve the amounts to make a smaller pan):

  • 3 lbs. Russet potatoes, very thinly sliced (about 1/8"). I leave the peels on, you can peel if desired.
  • 4 T. butter (1/2 stick)
  • 1/4 cup finely minced onion
  • 1 t. minced garlic
  • 1 T. Wondra flour (or all-purpose)
  • 4 cups half and half (plus additional if needed as they bake)
  • 1 t. nutmeg
  • 1 1/2 t. salt
  • 1 t. pepper
  • ham pieces, optional (see note after recipe)

1. Slice the potatoes into thin 1/8" slices (I use a mandoline/v-slicer to make this a quicker job, you can use a knife but try to keep the slices uniform. I haven't done it but you can probably use the slicing disk on a food processor). 

2. Preheat oven to 350'. Rub butter all over a 13 x 9" baking dish. An easy way to do this is to keep the paper wrapper around the 1/2 stick of butter, peel back some of the paper edge and rub the butter on the pan keeping your hands clean by holding the butter with the paper. 

3. Melt the rest of the butter in a large saucepan over medium heat. Add garlic and onion and cook for 2 or 3 minutes until softened. Whisk in the flour, cook and stir for 2 minutes to get rid of the flour taste.

4. Slowly add the half and half; I add a small amount and stir until it gets incorporated into the butter mixture, add a little more and stir until it's incorporated - this will keep lumps from forming (just like with gravy). Keep adding a little at a time until the butter mixture is soupy and thinner, then you can add more half and half at once. I'd say about 1 cup is added just a bit at a time before the butter/flour mixture is thin enough to add the remainder. Bring to a boil, stirring so it doesn't stick, then reduce the heat.

5. Season with nutmeg, salt and pepper. Taste to see if it needs more of anything.

6. Carefully add the potato slices to the cream sauce. The slices want to stick together so I separate them as I lower into the sauce. The more sauce you can get between the slices the less they'll stick together. You want the slices as individually coated as possible. Stir the bottom a couple times while you're doing this so the potatoes don't stick and the bottom doesn't burn. The mixture will probably still be slowly simmering, if not turn the heat up just a little bit - I kept the temp at low and it was still slightly bubbling.

7. Taste the seasoning, add more if needed.

7. Let the potato/cream mixture cook on the stovetop for 3-5 minutes. Pour into prepared pan and shake to evenly spread the potatoes. Bake for about 1 hour until lightly browned and bubbly. Watch that they don't get too brown on the top, press down on the potatoes every 20 minutes or so to bring the cream up over the top. You can stir the potatoes but it makes the finished product not look as pretty. 

8. Let potatoes rest for 10 minutes before serving.

notes: 

  • 3 lbs. is about 8 cups of potato slices.
  • if the potatoes look dry while they are baking you can add some half and half. 
  • If you want to add ham pieces, I put half of the potatoes in the baking dish, topped with a layer of ham, then the rest of the potatoes and sauce. I added about 1 pound of leftover ham I had in the freezer from Christmas, cut up into bite-sized pieces. 
  • You can make this ahead of time - I made it in the morning but only baked about 40 minutes. When ready to serve put back in a 350' oven for approx 30 minutes or until hot. 

Makes 10-12 servings

  • caprese burger salad (grilled burger patty topped with roasted cherry tomatoes, melted mozzarella and drizzled with balsamic reduction on top of field greens - forgot to take a pic! So good)

Words

I'm trying out a new Make My Day Camp weekly segment - I thought I was calling it Thursday Thoughts but now that I started 'Starch Madness' for March I'm moving the thoughts to Saturdays. 'Saturday Thoughts' isn't as catchy tho - I do enjoy alliterative titles like 'Tip-sy Tuesday' and 'Throw-back Thursday' but can't think of a nice alliterative word to go with Saturday. So it's now going to be called 'Words' and if I move it to a different day I'm still good hahaha. 

I'm inspired to share happy, positive, uplifting, humorous, and thoughtful moments with you after I've found myself saving pages from a fun desk calendar that Tesha gave me for Christmas. It's called '2023 Instant Happy Notes: 365 reminders to smile and shine!' and there have been some good ones - my favorites so far are probably 'calm is a super power', and 'be somebody who makes everybody feel like a somebody'. 

Here's a few I've saved, I won't always share this many with you but these are the ones I've kept since January 1st to catch this new category up:

SM: Yogurt Bagels

I've had this in my draft file since 7/20 when Tesha sent me the pictures and said that Kriss made yogurt bagels and they turned out great. I haven't posted before now because I thought I'd make them myself first so I could share any tips or changes, but since I haven't made them in the 2 years I've had the recipe and it's now 'starch madness' I'm going ahead and sharing her photos instead so you can make yogurt bagels for yourself. I still want to make these, I read good reviews (in addition to what Tesha told me!), I just haven't taken the time. Kriss doesn't know I'm borrowing her pics haha, hopefully she doesn't care ;)


  • 2 1/2 cups flour
  • 4 t. baking powder
  • 1 t. fine sea salt
  • 1 1/2 cups Fage yogurt
  • 1/2 cup water
  • 1 egg
  • 2 t. honey
1. Preheat the oven to 375'. Line a baking sheet with parchment paper
2. In a large bowl, combine flour, baking powered, and salt. Add yogurt and water, stir to combine. Knead the dough briefly until smooth. If needed, add a little more flour or water if the dough is too wet or dry.
3. Turn out the dough onto a lightly floured countertop and divide into 8 pieces. Roll each piece into a 3/4" thick rope, and bring the ends together, pressing them together. Widen the hole in the center slightly.
4. In a small bowl, whisk together thee egg and honey with 2 t. water until smooth. Brush bagels with the egg mixture. 
5. Sprinkle bagels with 4 1/2 T. everything bagel seasoning (*see below for recipe, or use store-bought seasoning mix).
6. Bake until browned and set, about 30 minutes. Transfer to a wire rack to cool completely. 
7. Serve warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 5 days.

Everything Bagel Seasoning recipe:

1 T. poppy seeds
1 T. sesame seeds
1 T. dried garlic flakes
1 T. dried onion flakes
1 1/2 t. fennel seeds
1 1/2 t. flaky sea salt
