Easter Savory and Sweet Charcuterie Board

I've done lots of charcuterie boards for various Holidays and parties, but never an Easter-themed one - googled for ideas and I love the idea of this one with both savory and sweet items all together on the board. I'm just copying the instructions and photo I found here at urbanblisslife, feel free to substitute other ingredients as you want and after I make mine I'll share my own photos. There's a lot more info and details on their site if you want to read more about how they built this tray of goodies.

Savory ingredients

  • 1 cup sliced carrots sticks
  • ½ cup sliced radishes
  • ½ cup sliced cucumbers
  • 1 cup sliced celery sticks
  • 1 cup spinach dip or other vegetable dip
  • ½ cup strawberries
  • ½ cup raspberries
  • ½ cup blueberries
  • 1 cup shredded lettuce
  • 12 deviled egg halves
  • ½ cup mixed nuts
  • 1 cup crackers
  • 6 ounces sliced cheese
  • 6 ounces prosciutto
  • 6 ounces salami slices

Sweets

  • 1 cup Easter M & M candies
  • 1 cup Cadbury Mini Chocolate Eggs
  • 8-10 Peeps marshmallows
  • 10-12 Spring sprinkle cookies

Instructions

  • Start by placing any dips into small bowls and placing them on the platter.
  • Next to the dip, place the sliced vegetables and fruit.
  • Lay down the shredded lettuce and place the deviled eggs on top.
  • Add a layer of sliced cheese and crackers.
  • Fill in the savory section with prosciutto and salami.
  • If you have space, you can fill in open spaces of the savory section with nuts.
  • Start the sweet section by placing peeps and cookies in rows.
  • Then place any chocolate candies.
  • Fill in the bottom and any open sections with M & Ms and mini eggs.

Notes

Makes enough to serve approximately 10-15 people as an appetizer.
Ingredients: The ingredients listed in this recipe are provided as inspiration. Feel free to omit any items you do not like and feel free to add more sweet or savory items that you enjoy.

Deviled Egg Dip

I love the idea of deviled egg dip, once again - why didn't I think of that? It's basically egg salad with the eggs grated, capers, relish, a little hot sauce...I'd think you can make the dip using your standard egg salad method or follow this one and see what you think. I'm definitely going to try this.

INGREDIENTS:

  • 6 eggs
  • 2 Tbsp. sweet pickle relish
  • 1 shallot, finely chopped (2 Tbsp.)
  • 1 Tbsp. capers, drained
  • 1/3 cup full fat plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 Tbsp. Dijon mustard
  • 1 tsp. white wine vinegar
  • 1/2 tsp. bottled hot pepper sauce
  • 1/4 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 2 Tbsp. chopped fresh chives, divided
  • Paprika

DIRECTIONS:

  1. Cook Eggs

Place eggs in a single layer in a medium saucepan. Add enough cold water to cover the eggs by 1 inch. Bring to a full rolling boil over high heat. Remove from heat, cover and let stand 15 minutes; drain. Place eggs in ice water until cool enough to handle; drain.

  2. Peel Eggs

To peel eggs, gently tap each egg on the countertop. Roll egg on countertop under the palm of your hand. Peel off eggshell, starting at the large end.

  3. Grate Eggs

Using the large holes of a box grater, shred eggs into a medium bowl. Use a fork to coarsely mash the eggs.

  4. Finish and Serve

Stir in relish, shallot, and capers. Add Greek yogurt, mayonnaise, mustard, vinegar, hot pepper sauce, salt, and pepper. Fold in until combined. Fold in 1 Tbsp. chives. Top with remaining 1 Tbsp. chives and paprika.

Serve this deviled egg dip recipe with crackers, vegetable crudité, or chips. Our recipe testers liked it best with cucumbers, carrots, bell peppers, and sugar snap peas.

Tip-sy Tuesday: Hiding Ugly Cords

Well here's a good tip I just saw on the time sucker Pinterest and I really wish I would have thought of this before now - I hate seeing cords hanging down under a table and usually try to twist-tie the excess and jamb it behind the table hoping it stays in place; this tip is to stick small command hooks on the backside of the table to hold the cord up, as soon as I came across this I had a 'smack my head and say aha' moment, genius. I happen to have a bunch of these little clips on hand and am going right now to hide the ugly lamp cord on the table by my front door. Happy Tuesday!

tip found here, they have a few other ideas for hiding cords if you want to check it out.

T.P. Bunny

Ok, on one hand this is a little dumb and silly but on the other hand it made me chuckle - I'm not thinking as a centerpiece for Easter dinner necessarily, but how cute on the bathroom counter?

I didn't download the template for ears and nose but I don't think it'd be hard to just wing cutting them out freehand. Glue on a couple google eyes and make a sharpie mouth and whiskers. Easy!

Floral Bunny

I'm hoping I can find a bunny statue thing that already is covered in greenery and then I love the idea of jazzing it up by attaching fake flowers and butterflies. But I'm not spending $72 on it (sale price!) so I'm only making it if I can find a way less expensive bunny that I can glue shizzle onto LOL

Carrot Pretzel Rods

I just got a catalog from Olive & Cocoa, their stuff is quite expensive but it's a very pretty catalog to look at! They sell gifts, flower arrangements, home decor, and edible gifts and I've gotten many ideas in the past from flipping thru the pages. I love these carrot pretzel rods and they'd be easy to make - yep, I'm still not able to use my right hand (carpal tunnel surgery) but I have a growing list of things I want to make as soon as I can - carrot pretzels are definitely on the list before Easter.

Dip each pretzel rod in melted orange chocolate leaving about an inch and a half or so at the top, sprinkle with tiny white sprinkle balls. Lay on a cooling rack and let dry. Then dip the end that isn't orange in melted green chocolate and let dry. Drizzle melted green overtop of the firm green chocolate end simulating the green tops of a carrot. Let dry.

The bunny pretzels are a little more involved but doesn't seem too hard - spoon melted white chocolate on a pretzel twist leaving the outer part of the pretzel showing (see photo), lay on a cooling rack until dry. Pipe on melted pink chocolate for the ears and nose, and melted milk chocolate for the eyes and whiskers. Let dry.

Grapevine Bunny Wreath

Last year I posted a cute bunny wreath using a wire form, twine, and artificial flowers (click here to see that post); I found another cute idea that is completely different - I plan to make this in the future but right now I'm still not able to use my hand so crafting is pretty much on hold for the time being, I'm sharing this inspiration photo I saw on bhg.com in case you want to make one.

Their description is only "use two inexpensive grapevine wreath forms. Customize your wreath with your favorite faux flowers. We chose a mix of garden roses, ranunculus, pom-poms, and dried seeded eucalyptus" with no other instructions I can find - I don't know about 2 grapevine wreath forms, we can see the one that is the head is just a round wreath form, for the ears I guess I'll check out what is available at the craft store - maybe two small ones that I can shape into ovals for the ears, or maybe they took a round one apart and reworked it into the ear shapes, or maybe it's one smaller wreath that they opened up like a book to make two ears and then wound grapevine around them to keep together. I'll attach the ears to the head using craft wire. Then wire on bundles of fake flowers and plants all around the head-shaped wreath form. Attach a chenille stem loop on the back to hang. I think this is adorable!!

April Challenge - Sleep!

Everyone knows we are supposed to get enough sleep, and when we don't it affects all kinds of things negatively. This month I want to consciously try to get a better quality of sleep and lots more of it! I have an apple watch and downloaded a sleep app, if I wear my watch to bed it'll track how long I'm asleep, how long I'm awake, and the types of sleep (REM, deep, light). In addition to tracking, I'm going to turn off my light by 10:30 (I go to bed earlier already but I read wayyyyy too long!) and shoot to sleep until 6; not eat anything after 8pm; and move as much as I can during the day - I also started taking melatonin and hopefully that'll help.

That's my April challenge for myself if anyone else wants to join me and work on getting more/better sleep!

Here's a Tip-sy Tuesday tip - I can't wear my apple watch all day and then sleep with it all night and have enough battery, so any time I have a window that I'm just sitting around and don't really need the watch then I throw it on the charger; or charge it while taking a shower or getting ready for bed - it charges pretty quickly.
