Italian-Style Frittata

I made 2 of these for our get-away weekend last week and they turned out great! Everyone loved. I followed the recipe with a couple tweaks - for one I added diced Canadian bacon and omitted the tomatoes, for the other I left out meat and used diced tomatoes instead of slices of plum tomatoes (I removed most of the seeds so it wouldn't make the filling too runny). This would also be good with other meats (cooked ground sausage, diced ham...) and vegetables (spinach, onion, mushroom, peppers...).

  • 6 eggs
  • 1 cup heavy cream
  • 1/2 cup sour cream (I used light)
  • 3 T. chopped fresh basil, divided (I used 1 Tablespoon dried)
  • 1 1/2 t. salt
  • 1/2 t. pepper
  • 4 cups diced hash browns, frozen
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese (I used grated)
  • 3 medium plum tomatoes, sliced about 1/4" thick
Directions:
1. Preheat oven to 350'. Coat 9" deep dish glass pie plate with nonstick cooking spray. In a medium bowl, whisk together eggs, heavy cream, sour cream, 2 T. basil (or 1/2 T. dried), salt and pepper until smooth, and set aside.

2. Spread hash browns evenly into bottom of pie plate. Bake uncovered for 20 minutes. Remove from oven and sprinkle with mozzarella cheese. Arrange tomato slices on top and sprinkle with parmesan cheese. Pour egg mixture over top.

3. Bake for 40 to 45 minutes, or until eggs are set and lightly golden brown. Garnish with remaining 1 T. basil (or the other 1/2 T. dried) and additional parmesan if desired.

Blueberry Coffee Cake (lightened up)

Made this coffee cake along with a couple frittatas for the family breakfast away from home last weekend - I didn't get a good picture because I'm super forgetful but it's the square cake between the fruit bowl and frittatas in the back in this photo:


I've been making this recipe for years, and we like it enough that it earned a place in my recipe keeper hahaha - I have waaaaaay too many recipes in files and cookbooks and I only keep the repeats in my binder!



  • 1 large egg
  • 1/2 c. skim milk
  • 1/2 c. plain nonfat yogurt
  • 3 T. vegetable oil
  • 2 c. flour
  • 1/2 c. sugar
  • 4 t. baking powder
  • 1/2 t. salt
  • 1 1/2 c. blueberries
topping
  • 3 T. sugar
  • 1/4 t. cinnamon

Preheat oven 400'. Spray an 8" baking pan with non-stick spray. 

Whisk together egg, milk, yogurt, oil. Sift flour, sugar, baking powder, and salt; add to liquid mixture. Do not overtax. Fold in blueberries. Sprinkle with topping.

Bake 20-25 minutes. Cool on rack for 10 minutes.

9 servings. each serving 242 cal. 6g fat

NOTE: I added about 1/2 cup applesauce just to ensure it'd be moist, and 1/2 t. cinnamon to the batter for a little extra flavor.

Tip-sy Tuesday: adding images to Cricut Design Space

I showed you how to add fonts to your Cricut design space, adding images that aren't already in the Cricut database is just as easy - Google for free SVG file of your desired image, for this example I found a balloon (even tho there are balloons already in the Cricut images, this is just for an easy example) and save it. Open a new project in design space, click upload at the bottom left of screen and insert the SVG image, continue. It will now be available for you to incorporate into your new project. Easy!

step 2 - click 'upload' and add it to this screen

3- now the image will be available for you to use in your Cricut project

    I doubt this post is going to inspire anyone but I have to show off Georgia's first pumpkin craft - she is 14 months old and obviously is going to take after her Grant Jill :)

    Caramel Apple Cider Cocktail

    Brooke made this delish drink the other night and even though I tend to not like many mixed drinks this one is sooooo good that I would definitely have it again! It's just caramel vodka and apple cider over ice with an apple slice garnish. Yum!

    End-of Season Roasted Tomatoes

    Anyone noticed that this is the first year in forever that I didn't inundate you with posts about roasting tomatoes? I have been roasting them all summer but figured you didn't need to hear about it hahahah. 

    But I figured I'd share with you my final roasting of the last of the tomatoes from our garden - I cut up all that were left, even the green ones, tossed with some olive oil and seasonings and baked at 350' for an hour and a half (stirring occasionally):


    and then I promptly forgot about them:


    NOOOOOOOoooooo! I was very bummed at myself for torching the pan 😩. Fortunately Kyle told me they still have tons at the farm and to go help myself - which I did, and roasted another big dish... and kept my mind on them this time!

    Halloween Door Mat

    The girls all painted doormats last weekend and I think they turned out so cute. We had some basic Halloween shaped stencils but for the most part everyone just used their creative minds to wing it (or had Macey freehand a design and then they filled it in!).

    Tip-sy Tuesday: tomato paste can trick

    Have I showed you this tip for easily getting out all the contents of a can of tomato paste? I feel like I have but I'm not seeing it - and since I used it today and took a couple pictures I'm sharing it with you (possible for not the first time haha).

    Making chili today and it calls for a 6 oz. can of tomato paste - run your can opener around both ends of the can, remove one end and push the contents out using the other end. Easy and it works!

    Repurposing a Chandelier

    This chandelier used to be in the foyer by our front door - it came with the house and was originally bright gold but we spray painted it matte black right when we moved in and I decorated little lamp shades that covered each bulb. Fast forward 20 years and I realize it's definitely time to replace the fixture, it just didn't do it for me in the foyer anymore so we found an updated version. I didn't have plans to keep the old fixture until I thought it might look cool in my craft room - and it does, it looks great (and provides way more light than I used to have). I got rid of the lamp shades and traded the old clear candle shaped bulbs for round frosted ones. Love it now - unlike when it was in the foyer!
