March Challenge (limit shopping)

I've decided my March challenge is that I'm not going to purchase anything that isn't necessary - which isn't easy because I love to shop haha!! Amazon makes it tooooo easy to order up anything that pops into my head and I really want to be more intentional this month in my purchases. 

Because really, do I need to buy another mascara when I have 10 in my drawer already? No.  

Obviously I'm going to shop for groceries and necessary items, and if anyone wants me to go shopping with them I'll go just to be with them, or if something comes up and I really need to buy a new item of clothing that I don't already own (that isn't going to happen but I'm putting it on here in case you want to do the challenge with me and are worried you'll not be dressed appropriately haha) there can be exceptions to my limited spending month - there's no hard rules, it's just a challenge to pay more attention and not buy more random things this month that I don't actually need! 

Anyone with me?

PS: this has nothing to do with the consumer boycott happening today nationwide that wants people to not buy anything for 24 hours to demonstrate that people have the power to make a dent in a companies bottom line or whatever. I've done "no-shopping for a month" personal challenges many times in the past and it's for no other reason than I have too much stuff which is why last month's challenge was to get rid of one thing a day!!

Felt Shamrocks

This is a repeat craft for St. Patrick's day that I thought you might like to see again since it's been 7 years since I posted it and it's a cute easy project.

Original post from 3/2018:

I had an idea to make shamrock flowers to decorate my table on Saturday (St. Patrick's Day dinner) so googled for some examples...didn't really find anything I liked but saw a few felt shamrocks and thought they'd be cute at everyone's place setting. I followed the directions I found here, but changed them a bit by tweaking the shape to get them how I wanted them to look, but they still weren't perfect - the centers looked a little rough and I could see the glue...what to put in the middle tho? Aha - how about a shiny lucky penny?


You need 4 leaves, see picture for the shape - they are about 2" square and sort of shaped like a tooth (do they look like teeth to you? or maybe a heart with the bottom notched?) and then a thin strip for the stem.

Pinch the bottom notches together and glue. I started with Elmers but that was taking too long to dry so I ended up getting the hot glue gun out and then they were done pretty much instantly.



 Glue 2 of the leaves together, repeat. Then put the stem in between and glue all pieces together.



 These look fine like this, but I finished them by hot gluing a shiny penny to the middle. These are so quick and easy to make that I'm making a few more so everyone at the table can have one! I'm thinking I'll place one on top of a napkin on everyone's plate before dinner.

Shamrock Pretzels

I posted this in '21 and totally forgot about making these - in case you also forgot and want to make them I'm sharing it again!

My sis sent me this idea last year but I didn't get around to making them , and of course forgot all about it. I found it again while going thru photos the other day, so made a mental note to get the ingredients (you know my 'mental notes' are pretty pointless, I really need to write it down!).  Seeing pretzels today at the grocery store reminded me that I wanted to make them, grabbed the 3 things I needed, came home and put them together in just a few minutes. How cute! I'm going to individually bag them and take to tap class (along with eating one. or two. we'll see hahaha). 


You'll need small pretzel twists, pretzel sticks, unwrapped rolos, and green m&m's. 

Preheat oven to 250'. Put a piece of parchment paper or a silpat on a cookie sheet. Lay out 3 pretzel twists and 1 pretzel stick to form the shamrock. Place a rolo in the center; bake for 3 minutes. Remove from oven, top with a green m&m and gently press it into the rolo. You'll want the rolo to spread a little bit so it'll stick the pretzels together and keep the shamrock shape. I used the end of a big skewer to press them down and not get chocolate all over my fingers - the chocolate stays melty for quite a while, after pushing the m&m's down go back thru and adjust the pretzels tighter together to help them hold their shape. Pop the tray into the fridge until the chocolate is set. That's it!

Tip-sy Tuesday: foaming hand soap

I have a foaming hand soap dispenser and ran out of the soap, instead of buying more I thought I'd make it myself - and yep, it's very easy. Mix together 1 part soap with 5 parts warm water and shake vigorously to combine. 

Any time something calls for a ratio like this one of 1:5 (meaning one part product, five parts water) you can figure out the quantities by adding the 2 numbers together to figure how many parts in total (in this case 1+5=6 parts total) . Find how many ounces your container will hold - I don't know how many ounces my dispenser is but let's make it easy and say it's 12 ounces. So divide 12 by 6 parts and it's 2 ounces per part. So to make the foaming soap you'll combine 2 ounces of soap with 10 ounces of water  (for a total of 12 ounces). Note: 10 ounces of water is 2 ounces times 5 parts. Make sense? 

You can use this formula no matter the size of container - let's do it with coffee. Now I have no idea how much coffee to water you would need but this is just an example of how to work ratios. If you have a jug that is 64oz. that you're filling with coffee and the recipe calls for a ration of 1:10 meaning 1 part product and 10 parts water, add the 2 numbers to get the total number of parts (in this case 1+10=11 parts total). Now divide the size of the jug by the number of parts (64÷11=5.818). So you would add 5.8 ounces of coffee and 58 ounces of water (I would round to nearest whole number and use 6 ounces coffee). 

Hope I made this somewhat clear!! Math is not my strong suit LOL

Kid Craft: Paper Leprachaun (re-run)

It's been 4 years since Brooke shared how to make a paper leprechaun so I thought I'd re-run it for you - what a fun craft just in time for the kiddo's to make for St. Patrick's Day! Here's the original post:

Hey guys! Today my friend made a Leprechaun for St. Patrick’s day! She used paper, scissors, glue, and Googlie eyes! First she traced and cut out her hand for the leprechauns beard/ hair and cut out a head, mouth, eyebrows, nose, and a hat. She glued it all together.  First she glued his face and hat all together. Then she glued the face on top of the hand cut out (or his beard) then glued his hat on top! So easy and so cute!

Chicken Cordon Bleu Casserole - Low Carb, GF

Yesterday I posted a recipe for chicken cordon bleu casserole that everyone other than my gluten-free niece loved, I also made a GF version so she could also have chicken cordon bleu with us - found this one that has a different sauce since she can't have flour, and it's really good. The sauce is very thick and I spread it on top of the chicken instead of pouring it on like the more traditional version yesterday, maybe if I added more liquid (like broth or milk) so it was thinner it would have coated the entire casserole instead of staying on top, but even tho this looked a little weird it tasted really good - I think everyone pretty much tried both and there were no complaints about either one! 

I only made a 2-quart dish of this one since I knew a full recipe would make way too much in addition to yesterday's 13x9 - there were 8 of us and we still had lots of leftovers. 


  • 6 cups shredded cooked chicken (from about 2 lb chicken)
  • 6 oz ham cut into bite size pieces
  • 4 oz butter melted
  • 6 oz cream cheese softened
  • 1 tbsp dijon mustard
  • 1 tbsp white wine (optional)
  • 1 oz lemon juice
  • 1/2 tsp salt 
  • 5 oz swiss cheese

INSTRUCTIONS
 

  • Preheat the oven to 350. Put the chicken in the bottom of a 9 x 13 baking dish. Layer the pieces of ham on top.
  • In a large bowl with an electric mixer combine the melted butter, softened cream cheese, white wine (if using), mustard, lemon juice, and salt. Blend until a thick sauce forms. Spread this sauce over the chicken and ham in the baking dish.
  • Lay the slices of swiss cheese on top of the sauce. Bake for 30-40 minutes until hot.
  • If you want the cheese more golden and bubbly you can broil it for 2 minutes at the end but do not leave it unattended as it burns very easily.

Chicken Cordon Bleu Casserole

Traditional chicken cordon bleu is ham and swiss wrapped in chicken with a crispy coating and sauce. I made this much easier version of it in casserole form for Sunday supper and it was a big hit - the traditional way isn't terribly time consuming, but layering everything in a pan is definitely faster and you get the same flavors so I will be adding this to my repeat recipe file for the future!


This is a Ree Drummond (the Pioneer Woman) recipe, I pretty much followed it but I did make extra sauce by increasing the butter another 2 T. and using 3 cups milk - taste and add additional mustard and cayenne if needed - and I added another 1/2 cup cheese. The other changes are I shredded the chicken instead of cubing it; and doubled the panko crumbs based on reviews. Yum! 

  • 6 T. salted butter
  • 2 cups small-cubed ham
  • 1 1/4 cups grated swiss cheese
  • 1 1/4 cups grated monterey jack cheese 
  • 4 cooked boneless, skinless chicken breast, cut into cubes
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 2 T. Dijon mustard
  • 1/2 t. cayenne
  • kosher salt and ground black pepper
1. Preheat the oven to 350'. Grease a 9x13-inch baking dish with 1 T. butter.

2. Put the ham on a paper towel-lined plate and microwave for about 3 minutes to reduce the moisture content, Mix together the swiss and monterey jack cheese in a bowl. 

3. Put about a third of the chicken in a layer in the bottom of the prepared baking dish. Top with half the ham. Sprinkle over 1/4 cup of the mixed cheese, Repeat 1 more time, then finish with a layer of chicken.

4. Melt the remaining 5 T. butter in a a skillet over medium heat. Put the panko in a bowl, pouring half of the melted butter, mix well and set aside. 

5. Add the flour to the remaining butter in the skillet and cook for 2 to 3 minutes, whisking out any lumps. Whisk in the milk, broth, dijon and cayenne and let it cook until it begins to thicken. Remove from the heat and stir in 1 cup of the cheese until melted. Season with salt and pepper.

6. Pour the sauce over the casserole. Sprinkle over the remaining 1 cup cheese, then the panko mix. Bake until the top is browned and the casserole is bubbling, 25-30 minutes.

Kid Friendly St. Patrick's Day Jello Cups

Mickey found this fun idea and asked if anyone wants to make them for Georgie's daycare St. Patrick's day party - ok well these seem super easy and I'd be happy to make them for her! I'll update with my own picture after I make them, in the meantime here is the idea in case you also want to make them.

I didn't look for actual instructions but it seems straightforward enough - I'll make green jello and pour into clear cups; after it sets up add 2 small squirts of redi-whip and add a rainbow Airhead candy strip. Cute, right?!

Tip-sy Tuesday: Fridge/Freezer Odor

Yesterday I shared that our fridge quit working and how disgusting it smelled (click here for that post) - the repairman gave me a tip that worked pretty good, it took a few days but it's 90% better than it was. He said to put bowls of whole coffee beans and bowls of baking soda in the fridge and freezer and it would help to absorb the odor - I knew about baking soda but not the coffee beans and I figured we had nothing to lose other than 14 bucks worth of coffee beans. 

The first few days the fridge smelled like the foul odor mixed with coffee, but a week later it mostly smells like just coffee. Like the repair guy said today when he opened the door "well at least we aren't gagging now" hahaha. There is a tiny hint of odor if I really try to find it, but at first smell it's just coffee. Once we get the fridge repaired he says the fan running will make the rest of the smell go away. 


I should have taken pictures before we cleaned a lot of it out, but here's a bit of what we found (trust me when I say it was 1000 times worse than this and we couldn't keep the door open for more than a few seconds before needing to take a break!):

Catching Up!

Well I just disappeared again for a whole week - sorry 'bout that. Short story is that we drove to our winter campground last Tuesday and things have been a mess since we got here! Refrigerator quit, who knows when, and it was the most disgusting thing ever - honestly I thought I was going to be sick from the smell!! Truly awful. We had so much work to do outside to clean things up, the association here has been threatening to fine us for not maintaining things up to their standards and until we got down here in person I thought they were just being picky but nope - they were right! The place is overgrown, dirty, weedy, trashy...all the bad stuff LOL. 

I said it was going to be a short story but I made it longer than necessary to just tell you that I have not had any time to blog anything! 

The fridge repairman had to order a part and came out today (we've been living out of our car cooler for a week!), the new part instantly shorted out and now he needs to reorder the part and another part that is bad causing the first part to short out. Insert eye roll. We are planning to come home in a couple days and I really hope the parts make it here in time! 

Ok, I'm done bellyaching! And if all goes well I'll be blogging tomorrow instead of complaining. HA!!

Valentine Kiss Mice

I've had this idea in my file for years and don't know why I've never made any of these super cute Kiss Mice - since I didn't make them again this year I'm sharing it with you and maybe you'll make them and share a picture for me! They look really easy - I don't have the templates for the ears and feet but the ears is just a paper heart sandwiched between 2 Kisses, and the feet you'll need to wing but it'd be easy to come up with a little paper shaped-something. 

For each mouse you'll need:

  • 2 Hershey's Kisses
  • card stock (red or pink for the feet and ears, yellow for the base)
  • yarn for the tail
  • 2 googly eyes
  • glue, scissors, marker 


Another idea to write on the 'cheese' card is "You're so mice". Cute, right?

Football Stadium Brownies re-run

For the final re-run of past food ideas for the Super Bowl I thought I'd share a sweet today - these stadium brownies turned out so cute!!!

Did you see the football brownies that I made for Super Bowl yesterday? They look really cute but more importantly they tasted really good!  (hmmm, is that true? Is it more important they taste good, or look cute?). Baking brownies is always a crap shoot for me, I don't want them over-baked so I usually pull them out too early and the middle sinks. For whatever reason this time they were perfect! I used a box of dark chocolate brownie mix for a 13x9 pan and doctored it with a few add-ins -
I used 2 eggs, replaced the water with cooled coffee, added a pinch of coarse salt, a teaspoon of vanilla, and 1/2 bag of mini chocolate chips. Baked exactly 20 minutes, removed from oven and immediately covered with foil; let cool. They turned out moist and chocolatey, perfectly level with no sinking in the center, and the edges were not dry.



I frosted them with my standard buttercream, added a few white lines and a "50" at the center line; decorated with sprinkles in the end zone sort-of giving the look of people in stands, gummy bears for the players (how much time it took me to figure out positioning was ridiculous!), striped Hershey hugs for the refs.


Tip for making straight frosting lines - I laid a skewer down on the green frosting to make a slightly indented line, then traced over it with my white frosting in a decorator squeeze thing with a small round tip.


 To keep the sprinkles from going everywhere I put them in a funnel - put my finger over the bottom opening and then slowly lifted my finger and directed the sprinkles into the end areas I wanted them. Worked like a charm.

Football Stadium Snack Tray

I posted this idea for dips and crunchers arranged to look like a football stadium in a post titled "Super Bowl Party Planner" but it should have its own post - it's too cute to be combined with other recipe ideas! 


To make this stadium you'll need 2 rectangular dishes - a smaller one to hold the dip and a larger one to set the dip dish in and have room to surround with the dippers.

Spoon 3 different dips next to each other (this is cheese dip, guacamole, and spinach dip) in the smaller dish, top with shredded cheese to divide the "field" and black olives (lined up to represent the players), pipe sour cream for the lines. Put it into the larger dish and fill around it with assorted crackers, chips, veggies, pretzels, etc.
